Garlic and Curry Snacking Almonds

I keep these on hand just about all the time—and rely on them as a topping for a simple salad or a protein-rich snack to hold me over in between meals.

Serves 4 to 6
Preheat the oven to 325ºF. Line a sheet pan with parchment paper and drizzle with the oil.
In a large bowl, toss the almonds with the egg white, making sure each almond is coated. Add the garlic and toss again to combine.
In a small bowl, combine the curry powder, cumin, salt, and shredded coconut.
Add the spice mixture to the nut mixture and stir well to thoroughly coat. Transfer to the prepared sheet pan and bake for 30 minutes, pausing to stir mixture every 10 minutes. Let cool before enjoying.

1 tablespoon extra-virgin olive oil
2 cups lightly toasted almonds
1 egg white, beaten with a fork until foamy
2 cloves garlic, grated on a Microplane
1 tablespoon curry powder
1/2 teaspoon ground cumin
1 teaspoon salt
1/4 cup unsweetened shredded coconut
